The first lab activity set in this two-part series includes investigations to determine the composition of cellular material, discover how pepsin breaks down proteins and how salivary enzymes break down starch, evaluate the concentration of vitamin C in a substance, and determine the pH of various foods. Part II includes all the materials you need, except the food, to investigate the pH of different foods; the presence of starch, sugar, fat, protein, and amino acids in food; the reaction of enzymes; the presence of Vitamin C; the chromatic separation of plant substances, and the differences in the color of plant pigments. Part I has enough materials to conduct each experiment 20–25 times, while part II has enough materials to conduct each experiment ten times. Both activities include a student guide.
